Lamb Kofta Koshkash with Baba Ganoush

Follow the steps of Arabic Chef Fahad to re-create a delicious Lamb Kofta Koshkash with Baba Ganoush that will impress your guests this Ramadan.

Serves 4 people 

INGREDIENTS 

  • Lamb Kofta Koshkash
  • Lamb Kofta 200gr
  • Tomato 200gr
  • Red capsicum 20gr
  • Onion 20gr
  • Ghee 100gr
  • Green chilli 5gr
  • Salt 2gr
  • Black pepper 2gr

PREPARATION 

Lamb preparation

  • Prepare the lamb mince with salt and black pepper in rolled pieces and grill it in the charcoal.

Sauce preparation

  • During this time, prepare the sauce with all the vegetables.
  • Cut all the vegetables; add onions, ghee, chilli, red capsicum, tomato, salt and pepper.
  • Then grill all the vegetables in the charcoal.
  • Place the sauce first on the plate and decorate with the cooked meat on the top.

Baba Ganoush preparation

  • Cooked eggplant 150gr
  • Green capsicum 30gr
  • Red capsicum 30gr
  • Tomato 50gr
  • Mint leaves 20gr
  • Onion 10gr
  • Green chilli 3gr
  • Garlic 2gr
  • Olive oil 10ml
  • Lemon 10ml
  • Salt 5gr
  • White pepper 2gr
  • Pomegranate 10gr

PREPARATION

  • Chop all the ingredients and mix them together.
  • Add the olive oil, lemon juice and pressed garlic.
  • Salt and pepper to taste.
  • Garnish with pomegranate and mint leaves.
